I work 6–7 days a week. Sometimes for long stretches. And I’m not apologetic about that.



I love what I do. I believe in momentum. I think that building something meaningful requires seasons of intensity, focus, and showing up even when it’s hard.


But I’ve also learned this the hard way: Burnout doesn’t make you stronger. Recovery does.


Going hard only works if you also know when to pause. Rest isn’t quitting. It isn’t slowing ​you down from achieving your goals. It’s protecting the energy, clarity, and creativity required ​​to actually reach them.


This week, we’re stepping away for four days. No chaos. No grind. Just rest, perspective, and space to breathe. Because I know that when I come back, I’ll be sharper, more focused, and ready to finish the year strong​ and welcome the next one with intention.


Here’s the balance I’ve learned: Work hard on purpose. Rest on purpose. Repeat.


If you’re building something big, don’t glorify exhaustion. Honor the rhythm that allows you to sustain success.


See you on the other side​: recharged and ready.

Hi friends, happy Monday!



I wanted to share a little LDP update because November… wow. We just wrapped up a record-breaking November, and Terlingua has been absolutely buzzing. Tourism has been nonstop, the weather has been showing off, and the desert has felt more alive than ever.


Every single person who walks through our doors is part of this wild, beautiful story we’re building out here, so thank you!


And I have to say, social media has taken off like crazy lately. I’ve met so many of you through videos, messages, and comments, and it has been one of the most unexpected gifts of this year. Sharing our life in Terlingua has opened the door to the coolest connections. I’m so grateful for every person who found us online, visited because of a video, or followed along from afar. I truly look forward to continuing to create, share, and connect with all of you.


My question to you: What type of content do you want to see?


As we head into December, we’re taking a quick pause to rest and reset. We’ll be closed this Sunday, the 14th through the 18th, and back open on Friday. We will be refreshed and ready for the busiest stretch of the year. Andy and I are sneaking away to Cabo for a few days to breathe, reset, and soak in a bit of sun before Christmas season hits full speed. I'm very excited for a little work break.


This year has taught me so much about adaptability. You have to learn how to pivot fast when unexpected changes pop up, how to lead with flexibility, and how to trust yourself even on the craziest days. And, we've had some bad days. Running a restaurant in the middle of the desert will humble you in the best ways, and it keeps teaching me that moving quickly and staying open-minded is the secret to surviving and thriving out here.


And truly… I’m grateful. For this community. For our team. For everyone who follows along online. For the thousands of people who’ve shown up for this journey, both in person and through the screens.


Building this life in Terlingua has been nothing short of incredible. Thanks for being here, friends, and I can’t wait to share what’s ahead as we close out 2025 and roll into a new year full of growth, adventure, and really good pizza.

Let me reintroduce myself, because there are a lot of new faces, and I’m so glad you’re here. I’m Mallory Mundy, the creator behind Mundy Out West, an entrepreneur, restaurant owner, storyteller, and someone who believes wholeheartedly in building a life you’re excited to wake up to. A few years ago, I packed up my predictable Austin life and moved to a tiny desert town on the Texas–Mexico border. I didn’t have everything figured out, but I did have a dream, a work ethic, and a belief that life gets really good when you’re willing to bet on yourself.



Since then, my world has been shaped by risk, reinvention, and the kind of hard work that grows you from the inside out. My husband and I bought a small pizza shop in Terlingua, Texas. Yes, the middle of nowhere. It has been challenging, humbling, and the best leap we have ever taken. Today, we own two restaurants, one in Terlingua and one in Ambergris Caye, Belize, and every day continues to remind me that dreams don’t fall into your lap; you build them with grit, creativity, and consistency.


Along the way, I’ve also built businesses, coached entrepreneurs, consulted in real estate, and shared my journey through content. I'm obsessed with the real parts of entrepreneurship, the long hours, the pivots, the setbacks, the personal growth, and the joy of seeing your ideas come to life. I talk about mindset, fitness, sobriety, and choosing happiness even on the hard days. And I love to talk about this wild, beautiful desert that changed my life and continues to teach me what matters.


Mundy Out West has always been about more than photos and stories. It’s about helping people believe that they can change their lives, too. Whether you’re dreaming about moving somewhere new, starting a business, reinventing yourself, or simply finding more peace and passion in your daily routine, I hope this space shows you what’s possible. I hope my journey inspires you to chase the version of your life that feels true, exciting, and aligned with who you want to be.


So, if you’re new here, welcome. If you’ve been here for the long haul, thank you. I’m grateful for this community, and I can’t wait to share more of the behind-the-scenes, the adventures, the lessons, and the real, everyday moments that make up this life out west.
